At the age of 23, he opened Restaurant Cédric in Weinstadt. A year and a half later, the Michelin Guide honoured him with a star and the Young Chef Award. And now, he is the new brand ambassador of HEPP: Cédric Staudenmayer. Staudenmayer has a long personal history with the exclusive products from the specialist for cutlery, table tops and buffets. His grandfather, also a chef and once owner of the restaurant, appreciated the CONTOUR cutlery collection from HEPP. The restaurateurs were not only won over by its flowing lines and simple aesthetics, but also in particular by its high quality. This is now paying off: Staudenmayer adopted all the cutlery items from his grandfather and arranged for them to be reconditioned, so the CONTOUR collection now sits alongside his regional and seasonal menus. “The timeless design and high-quality feel emphasise my grandfather’s traditional approach as well as my modern fine dining concept,” says Staudenmayer. For Carsten Kulcke, General Manager of proHeq GmbH, the young star chef is the perfect face for HEPP: “Like no other, he creates a connection between traditional and modern award-winning cuisine of the highest level like.”
Despite being reconditioned, the cutlery has retained its patina, which, for Staudenmayer, is part of the story – a story in which the traditional Krone inn in the Swabian town of Weinstadt became the Michelin-starred Restaurant Cédric. The restaurant has been refurbished and guests can enjoy a modern ambience that is both cosy and rustic. Guests are welcomed by linen tablecloths, embroidered cloth napkins and CONTOUR cutlery for five courses laid on the table. Ordering a new cutlery collection never occurred to him. “Modern cutlery collections often only work for one particular course. But a classic model accompanies the guests through an entire menu,” explains Staudenmayer. Another important aspect for him was the fact that he can still reorder a cutlery collection that has been used by his family for decades. “It was no problem at all to add cutlery items such as gourmet spoons and gourmet forks to our inventory.”
Restaurant Cédric: a successful one-man show
Purchasing and preparing food, setting the table, serving and washing up: at Cédric, Staudenmayer has everything under control. On weekday evenings, 12 to 15 guests enjoy his creations, and the menu changes every eight weeks. “At the moment I don’t want to do anything differently. The work is intense, but I wouldn’t have such close contact with my guests in a large restaurant and the associated team,” says Staudenmayer.
HEPP KREUZBAND: a personal companion
Staudenmayer completed his training as a chef at the Cube restaurant in Stuttgart. During his first position at the Ophelia restaurant in Constance, he came across another HEPP classic for patisserie: the iced tea spoon from the KREUZBAND collection, which was used there for ice cream dumplings. “The spoon is the perfect size for shaping desserts and it also looks really cool,” says Staudenmayer. He then refined his skills in the famous Michelin-starred Schwarzwaldstube restaurant at the Traube Tonbach hotel in Baiersbronn, where he was presented with one of the iced tea spoons as a farewell gift. I now wear it as a tattoo on my forearm.
