At this year's Host in Milan, the WIESHEU Group will be presenting the comprehensive product and service portfolio of WIESHEU, WACHTEL ABT, Atollspeed and WINNOVATION at a joint exhibition booth. The group is thus placing a strong emphasis on its role as an international solution provider for professional baking and snacking: its presence in Milan underlines its many years of technological expertise in addressing current market trends and meeting the diverse requirements of various customer groups – from bakeries and artisan production to in-store baking and the baking and snacking business in the catering and hotel industry. The trade fair presentation focuses on established ovens and innovations in the areas of hot air, rack and hybrid technology, which combine the highest product quality, ease of use and energy efficiency. ‘The strengthened “Pane, Pizza e Pasta” area at this year's Host, with its clear focus, offers the ideal setting for our broad brand portfolio to present our innovative technologies and solutions for enjoyment and quality,’ explains Marcus Gansloser, CEO of the WIESHEU Group.
One highlight at the trade fair stand is the high-speed oven area with the new Atollspeed easy black: this innovative high-speed oven delivers quickly reproducible results, is intuitive to use and boasts a modern design that is a real eye-catcher at the point of sale. In combination with other focus products – such as the compact Mix&Match baking station or the Dibas smart hot air oven with smart deck from WIESHEU – the result is a range of products that provides fresh baked goods and hot snacks flexibly and efficiently. The plug-in 230V tower solution Mix&Match combines the proven WIESHEU Minimat 43 S in-store oven with the Atollspeed 300 T high-speed oven and is ideal for space-saving use in hotels, restaurants, petrol stations or convenience stores: The Minimat reliably delivers baking quality for rolls, croissants and pastries, while the Atollspeed regenerates cooled and frozen snacks in record time. To do this, the Atollspeed combines impingement and microwave technology to freshly prepare crispy pizzas, pinsas and many other snacks in 30-90 seconds from the refrigerator and in 2-3 minutes from the freezer.
Dibas smart x smart deck: economical and flexible
The Dibas smart with smart deck from WIESHEU combines convection and deck baking in one system – ideal if, in addition to snacks, artisanal products such as pretzels, breads or tarte flambée are also in demand. The standing heat of the deck oven ensures the typical artisanal crust and appearance, while the convection oven provides speed and flexibility.
‘hi, bread’ – efficient baking automation in specialist shops
Another focus of the trade fair presentation is on solutions for current industry issues such as the increasing shortage of skilled workers, advancing digitalisation and the use of artificial intelligence. With ‘hi, bread’, WIESHEU and WINNOVATION are presenting an innovative system solution for automated in-store baking in food retail and bakery chains. State-of-the-art baking technology is complemented by intelligent automation, ensuring a fresh, demand-driven offering at the point of sale around the clock. The automated baking process reduces workload for staff, increases product quality and uses energy particularly efficiently. Operators benefit from consistently high product availability, avoid overproduction and reduce operating costs. Thanks to its modular design, ‘hi, bread’ can be flexibly adapted to individual requirements in terms of space, capacity, automation and budget.
For the highest demands in production: the ATLAS EVO 3 from WACHTEL
Bakeries and production facilities in particular are facing increasing demands for energy-efficient and economical solutions without compromising on taste and quality. WACHTEL is presenting the ATLAS EVO 3 in Milan, the next generation of its proven rack oven, setting new standards in energy savings, user-friendliness and ease of service. Thanks to its sophisticated design, the ATLAS EVO 3 not only impresses with outstanding baking quality, but also offers maximum flexibility in terms of energy supply: this all-rounder can be easily configured for operation with gas, oil or electricity, and switching between them is simple at any time. In addition, optimised chassis baking chamber separation and improved door insulation ensure minimal heat loss. Modernised components such as an optimised steam generator and a revised ventilation concept set new standards in shot-by-shot baking and support the production of high-quality baked goods. The smart WACHTEL Remote IT platform for comprehensive monitoring and the function of utilisation optimisation as well as operating cost display for more efficient baking processes round off the features of the ATLAS EVO 3.
